These almond flour keto pancakes are the perfect addition to your keto diet plan. One of the hardest things about the keto plan is finding a variety of key foods to eat. Every now and then you will want to eat something other than meat that won’t knock you out of ketosis. These are it.
The first thing I can tell you about cooking these pancakes is that you will need eggs. At least 5 to 6 of them, because without eggs the pancakes won’t bind together. So I want to tell you this upfront. If you find a recipe that don’t require this many eggs…well, they’re just not being honest. And I’ll leave it at that.
So let’s get to it.
My Almond Flour Keto Pancakes Recipe
Here’s what you will need in terms of ingredients:
1 cup of almond flour
1/3 cup of coconut flour
2 tbspns of cream cheese
4 tbspns of sweetener of your choice
5-6 eggs
1/2 cup of almond milk (or more if you need it)
1 tbsp of almond extract
Directions:
Mix your two flours together. Add eggs one at a time and add milk in between. Mix together with a spoon and add cream cheese, sweetener and almond extract. Butter your pan and pour in mixture.
Now here is what’s tricky about cooking these pancakes. You might want to use a nice red copper bottom pan. It is worth it. But you will also want to take the pancakes off the fire and move it around from time to time to let the mixture set. Otherwise, you may flip the pancakes too soon and it will break apart. Or you might leave it on the stove too long and it will burn. Either way, take your time.
Flip the pancakes after you can clearly see that they’ve cooked well on one side. Once you flip if over and cook it well, you won’t have to cook it again.
Once they’re done you can add your favorite sugar free syrup. I use Cary’s.
